Celiac Disease

Celiac Disease (CD) is an inherited autoimmune digestive disease. CD is triggered when gluten is consumed. Gluten is a protein found in wheat, barley, rye, and possibly oats. The immune system responds, damaging the lining of the small intestine and preventing parts of food to be properly absorbed into the bloodstream. This can result in malnourishment and other complications if untreated. Small amounts can affect those with CD and damage can occur even when no symptoms are present.
